INGREDIENTS
- 3⁄4 cup Greek yogurt (vanilla or plain, 2% or higher for extra creaminess)
- 1⁄4 cup pumpkin puree (unsweetened)
- 1 tbsp maple syrup
- 1⁄2 tsp pumpkin pie spice
- 1⁄2 small apple, diced
- 1 tbsp granola (for crunch)
- 1 tbsp chopped pecans or walnuts
- Sprinkle of cinnamon for garnish
DIRECTIONS
- In a small bowl, mix pumpkin puree, maple syrup, and pumpkin pie spice until smooth.
- In a glass or bowl, layer half of the Greek yogurt, followed by the pumpkin mixture, and then diced apples.
- Add the remaining Greek yogurt on top and sprinkle with granola, chopped pecans, and a dusting of cinnamon.
